I say stick with 525 chain and steel sprockets. -1 in the front for extra acceleration.
Stay away from aluminum sprockets. No need to do a 520 conversion for the streets. And for the love of God, do not let ChiefBD anywhere near your chain. 200+lb black man vs chain tool, always bet on Black.

get DID chains, they last longer and def stay away from sluminum sprockets.

a bit more money but well worth it. i think i paid 200 something. check around though i'm sure you'll be able to get them cheaper. renthal sprockets are good also. good luck

+1 on the DID chain - if you go the "cheap" route you'll be replacing the chain more frequently. Learned that the hard way.
I've got Renthal and Driven sprockets for my 2005 Gixx 600. Been happy with both, but the Renthal has more miles on it. BTW, Nolan makes all decisions regarding chains, sprockets, and everything else for my bike. So I'm just reporting on what he's done.

Wheelies aren't going to be the biggest problem as you can always learn to be smoother on the throttle. The big problem I see with lowering gearing is the 10+% increase in displayed mileage. Definitely get a speedo healer.
